Mostly finely chopped parsley and mint, with tomato, a little soaked bulgur wheat, lemon, and olive oil. Done properly it is overwhelmingly green; the grain is a supporting player, not the base.

A mezze staple, and a quiet test of a Lebanese kitchen — too much bulgur and they've missed the point.
