Yogurt strained until it becomes thick enough to roll into balls, store in olive oil, or spread on flatbread. Mild, slightly tangy, versatile. The everyday version is eaten at breakfast with za'atar and oil. The aged version (hard labneh) is closer to a soft cheese. Both are worth your time.
