A category more than a single dish. Pani puri: hollow crispy spheres filled with spiced water, tamarind, and chickpeas, eaten in one bite. Bhel puri: puffed rice tossed with chutneys, onion, and tomato. Sev puri: crispy rounds piled with potato and two chutneys. Dahi puri: the above with yogurt.

The flavour profile — tamarind for sour, mint for cool, chili for heat, jaggery for sweet — is unlike anything else. The Indian Bazar area of Bur Dubai has chaat counters that have been doing this for thirty years. Go at lunchtime. Eat standing up.
