Rice cooked with meat, tomato, and a warm spice mix — loomi, cardamom, cloves, cinnamon, saffron. Considered Saudi Arabia's national dish and a close cousin of Emirati machboos; the lines between the two blur from kitchen to kitchen.

A centrepiece dish for gatherings, served on a shared platter, usually with that same tomato-chilli sauce nearby.
